Reposting @416coffeeguy Pirates of Coffee , based in Toronto , first caught my attention when I noticed their transparency around where they were getting their beans, and how much they were paying their farmers. When they announced they had a Geisha varietal from Panama, produced by @creativacoffeedistrict , I was very intrigued. Following through with their transparency, their website goes through everything in great detail, including the reasonin...g behind the artwork (done by @i.a.rajwani), the science behind the natural aerobic process used and a brewing guide. I'll cut to the chase: these beans were astoundingly delicious. This is a coffee that would make me exclaim "mm!" several times, starting from the moment I would open the bag and smell the aroma, all the way to the last sip. There is just no way to miss any of the tasting notes : "Rose, Apricot, Mango, Strawberry, Honey". It was so sweet and syrupy with the smoothest finish. I loved that it was complex, the various flavours almost taking turns to surface within each sip. I followed the brew guide and found it gave me really delicious cups, so I didn't really stray away from it. I initially used both the v60 and the origami dripper interchangeably, but afterwards found this tasted particularly delicious with the Origami dripper and (using a Kalita Wave filter). Definitely keeping an eye out for more deliciousness coming from @piratesofcoffee and @creativacoffeedistrict . I recommend you do the same!

My curiosity around coffee started at this roastery @rawcoffeecompany in Dubai like 6-7 years ago. I walked in and @karthithebarista and the founder @rawmattt let me try a new Ethiopian Natural Harrar that had just arrived. It blew my mind that a coffee could naturally taste like blueberries! If not for this chance encounter, who knows if @wetheorigin and @piratesofcoffee would exist today?... Thanks @ridahbadami for sending this to me from Dubai! - Abbas

Coffee fam, we got quite a few responses to this one. Heres the answer... Its a Geisha from Panama. And the processing is a natural anaerobic technique. It was fermented anaerobically for 72 hours and dried on raised beds.... Its a beauty

The Treasure of Panama is back! Some off you will remember this as the Snickers Bar of coffee. Its a rare one, we bet you cant buy coffee from Barreta, Coclé, Panama anywhere else. We dare you to go on a treasure hunt and if you somehow find another place to buy Barreta coffee, let us know and well gladly send you a bag of this Treasure of Panama on us. Good luck, not! The producer Alvaro Gonzalez keeps the gems coming from his home in Barreta (stay tuned, we have a...n update from Alvaro himself coming soon!). The notes on this treasure are Caramel, Snickers Bar and Cane Sugar. We hung out with Alvaro and had this coffee with him back in January. We were blown away at how much it reminded us of Snickers so we purchased the entire lot via Direct Trade at @wetheorigin. It is part of our Transparent Origins series. Recommendation for Crew Members: When you crack open a bag of Treasure of Panama, immediately stick your nose inside the bag to be transported to Snickers heaven. Were excited to launch this limited edition micro-lot from Yemen at @piratesofcoffee today Repost: The ship returns with: The Treasure of Yemen ... A complex coffee from a complex origin. It has many layers: hibiscus, cardamom, honey and a gummy bear-like sparkling raspberry. This coffee was produced by Saleh Mohammed Hanash, a Yemeni small-hold coffee farmer from the Ibb, Al-Qafr region in the village of Shaia'an. The people of Yemen are currently living through a humanitarian crisis, with 24 million people in need of aid. For every 100g bag sold, $3 will be donated to Red Crosss Yemeni Appeal in partnership with @rabbitholeroasters who helped us source this coffee along with @sabcomeed. Canada Day is a day of frustration for indigenous people. And we cannot ignore or overlook the past. - Our previous post mentioned how proud we are to be part of a country that has welcomed us since most of the #WTOteam are not originally from this country. It was an expression of appreciation for the relative tolerance for multiculturalism that we did not experience before we immigrated to this country, and we wished to express our gratitude. - However, we did not make it cl...ear that it was in no way an implicit approval of the atrocities that the settlers, including us, have imposed on the First Nations, Métis, and Inuit peoples. We were wrong in not addressing the fact that this land was stolen from the Indigenous peoples, and we would like to correct our mistake. - We are grateful for the opportunities we have in this country, but we need to acknowledge that we took them from its original caretakers. These opportunities are built from a colonial system that still oppresses Indigenous peoples to this day. - Canada itself was built on the foundation of European settlement that wiped out the Indigenous communities and imposed systems that completely disregarded Indigenous peoples welfare, cultures, ways of life, and much, much more. This is not to mention the discrimination, oppression, marginalization, persistent violation of indigenous rights and basic human rights that ensued and that the 1.67 million Aboriginal peoples in Canada are still facing. - We see Canada Day as an opportunity to educate ourselves, to listen, and to reflect on our past wrongdoings. We believe in the power of respectful communication, meaningful dialogues, and diversity of thoughts. For over 25 years, Ric (@ricrhinehart) has held executive positions in several coffee and tea firms. He is an experienced professional with a demonstrated history of working in the hospitality industry. Most recently Ric served as the executive director of the Specialty Coffee Association (SCA) for over a decade. Prior to joining the SCA, Ric was the chief operating officer of Groundwork Coffee Co, a specialty coffee roaster and tea purveyor based in Los Angeles, California. Before joining Groundwork in 2002, he was the president of R2 Consultants, a management consulting firm specializing in the coffee and tea industries. Damian Reed (@everythingcoffeefun) has planned and piloted an impressive coffee project in the highlands of Barreta, Coclé in #Panama which started in 2008. It was something he has wanted to do since he saw how the major national coffee company abused that community back in 1994. Back in Canada, he bought a Barbecue Coffee Drum Roaster and began his education in coffee. In 2008 the Reeds returned to Panama. He then put into action his plan to open up a brand new Specialty Co...ffee Region in an extremely isolated part of Panama. After 12 years and counting, the project continues and Damians hands-on knowledge and experience have also advanced. He now has ample experience, knowledge and relationships in everything coffee from the farm to the roaster. #JUMPConference #WETHEORIGIN

He works with farmers around the world, understands their problems and helps them run more sustainable businesses. He ensures he buys only sustainably sourced, high quality coffee beans. Born in India, he spent most of his life working in hotels and hospitality. His love for coffee exploded when he had a chance to sample a Kenyan coffee and it was unlike anything he had ever tr...ied before. It was fruity, juicy and had a flavour profile that got him excited. So much so, that he threw all his energy into tasting, buying and roasting the worlds best coffees to learn more about each bean. When you drink coffee, you are consuming something that a coffee farmer somewhere around the world has worked extremely hard to produce. You might pay anywhere from $1 to $5 for a cup of coffee, but only a couple cents of this will reach the coffee producer. Most coffee producers struggle to earn enough money to cover their cost of coffee production. In order to provide for their families, many producers are forced to eventually shut down their unprofitable coffee farms.... Globally there are over 25 million coffee farmers who have to deal with this stressful problem.
