Been feeling sick these last two days, so I got myself a new Vitamix! I love the fact that you can put the seeds from fruits right in there and blend it up until its smooth. We have been trained to remove the seeds from our fruits & veggiee, but that is where A LOT of the nutrients and antioxidants are. Yesterday I made a power green smoothie! Water, celery, pinapple, lemon, lime, orange (with the skin on!) and two large handfuls of spinach. Sooooo refreshing and nourishing! Looking forward to experimenting more with my Vitamix. Anyone else have one? Please share what you have made!

Almond Milk Chocolate Zucchini Muffins Chocolate muffins get a healthy makeover! Made with gluten free flour and no butter or refined sugars. Youre going to love these insanely delicious muffins! Ingredients... 1 cup gluten free flour 1/3 cup unsweetened cocoa powder 1 teaspoon baking soda teaspoon salt 2 tablespoons coconut oil 1/3 cup honey or agave nectar (I used honey) 1 teaspoon vanilla 1 egg 1 egg white 1 cup shredded zucchini (about 1 medium) cup unsweetened applesauce cup unsweetened almond milk cup regular or mini chocolate chips Instructions 1. Preheat oven to 350 degrees F. Line 12 cup muffin tin with cupcake liners and generously spray inside of liners with nonstick cooking spray. 2. Squeeze shredded zucchini of excess water with a paper towel. This is important, so dont forget! 3. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside. 4. In the bowl of an electric mixer, add coconut oil, honey, vanilla, egg and egg white; mix on medium-low until smooth and well combined. Add in zucchini, applesauce, and almond milk; mix again. Slowly add in dry ingredients and mix until just combined. Gently fold in chocolate chips. 5. Evenly divide batter into prepared liners. Bake 22-25 minutes or until toothpick inserted into middle comes out clean. After 5 minutes, remove muffins and transfer to wire rack to finish cooling. Enjoy! Notes: To keep muffins dairy free, use dairy free chocolate chips. I love adding a few extra chocolate chips (2-3) on top of each muffin before baking to make them look pretty, but its up to you! Enjoy!!!

Did you know that breakfast is the most important meal of the day? Yet I hear so many excuses as to why people dont eat breakfast. I really encourage to get something in your body and break that fast from overnight. Breakfast doesnt have to be fancy, it can be something as simple as a "smoothie bag". What you do is you add all of your dry ingredients including your fruit, vegetable (spinach), protein powder and greens powder. You place it into your freezer, and then in the ...morning all you have to do is grab your "smoothie bag", dump it into a blender, add your liquid and BOOM you have a smoothie! This is something you can prep a ton of as it is all frozen in your freezer. Nothing is better than knowing where your food comes from and what youre consuming to fuel your wonderful body. Theres something amazing about walking to your backyard and pulling whole foods out of your garden that youve been nourishing and nurturing every day as it grows. Its also something that you need to get used too because the other day I realized I didnt have any cilantro for a recipe.
