@annika678 and @hiroaki.takeda85 used out amber maple and dark birch syrup in their roast pork dish, served to @danivachon and her staff @thebeaconcollective last night. The glaze was made by first reducing apple cider, then adding the two syrups and some apple cider vinegar.

Our dark birch syrup is our most robust syrup. Made from approximately 120L of birch sap into just 1L of syrup, this product is quite unique. You really gotta think of it as equivalent to an aged balsamic vinegar, but with notes of dark cherry, molasses, and slight acidity. Our favorite ways to have it are on roast pork or duck, on grilled salmon, as a base for salad dressings and with chocolate. It’s a great Christmas gift for that special someone who loves unique food products, and it’s produced right here in Hope, BC.
