WHAT IS HIGH QUALITY? Did you know that before I was a practicing herbalist I was a chef? I worked in many different settings including camp kitchens, fine dining and food television. The skills I learned as a chef are integral to my herbal practice and many of the techniques for processing food are similar if not the same for herbs, including kitchen chemistry, preserving, drying, sanitation and safety practices. ... In my time working professionally with food, it became clear that the fresher and higher quality the raw ingredients, the better the final dish. One of my mentors used to have us pick through every single leaf in a bag of mixed greens, hand scrub every single mussel and trim the brown ends of every single bean sprout to ensure freshness. My chef teachers eye for detail and thoroughness didn’t just apply to the food, it also applied to our workspace and equipment. Every single night we spent at least an hour scrubbing the kitchen, and every night we walked out of there, it looked like a brand new kitchen (I’m not exaggerating). She believed in the importance of respecting our workspace and the equipment that works so hard for us. Although these practices could feel arduous, I don’t think anyone could have argued that our food wasn’t the freshest and highest quality around. I have carried these teachings into my herbal practice. I am always striving to source the freshest herbs, oils and other raw materials, locally when possible. Those tedious hours in the kitchen were often difficult (as anyone whose scrubbed clean 20+ lbs of tiny mussels hunched over a sink for hours, hands numb from the freezing cold water can attest), but they instilled in me a work ethic and high standard of quality that I am so grateful for and that I have carried over into my own business. Hands on Medicine It’s not the fastest way to grind herbs, but I love using the mortar and pestle. Slowing down allows us to be very present, which is important for honouring our medicine. I hand ground this Chaga for tea for myself because I was feeling like I could use some immune and liver support. It is important to be aware of your sources and their sustainability commitments and practices so we can continue to have access to this amazing medicine. Too often we’ve seen wild trendy herbs and medicinals be over harvested which can lead to ecosystem collapse and extinction of species. The wild is not for us to take from, but for us to participate in, in a relationship based on respect and reciprocity. This is often not taught to us in our early lives, or at all. When we start to explore our relationships with land and medicine, and deepen our connection, we are accessing a whole other realm of healing. One beyond just the physical, one that reaches out and includes our spirits, the plant spirits, all of nature and our environments. When we heal the earth, we heal ourselves and when we heal ourselves, on all levels, we heal the earth. As above, so below.
