Hello, Summer ! I’ve definitely been known to work like a maniac all summer (it’s hard not to when you live in a tourist town and work in the hospitality industry) but my health, happiness and just general quality of life always suffers when i do that!! My goals for this year are to get out on the water in my kayak/row boat/paddle board at least weekly, go camping monthly and to get outside for minimum an hour every day! Oh and i also want to try fishing and crabbing! What are your summer fun goals?

I miss having people sit at my bar. I miss chatting about everything and nothing while making you delicious drinks. Connecting face to face with friends and strangers all the time has been something i realized i had taken for granted. I’m not sure when i will have the opportunity to have patrons sit at the bar again, but when you do, i will be ready for you! I have taken this time off to brush up on my bartending skills and spirits knowledge and i’m so excited to share it wi...th you. The best thing about this whole thing has been the countless free courses and webinars that have been available online. My favourites being: zoom webinars with @laurenmote of @bittered_sling and @diageo (i loved hearing your story, how you started in the industry, your contribution to the Vancouver cocktail culture, how you met Jonathan, started Bittered Sling, got married and then headed to @worldclass finals the next day! Cocktail Kitchen was amazing too) Spirited Sessions with @sovereigncanada every 2 weeks learning about gin, mezcal, whiskey and pisco from experts in the industry learning about maceration, bitters, amaro & fortified wine with Cole of @apothecarybitters @pdxcw and their many online sessions including learning about cleanliness & polish with @jared.sadoian , preservation with @phoebe.esmon , dexterity behind the bar with @lpdrinksdc & @axljump , milk punch & fat washing with @ahotdogisasandwich , all things garnish with @the_garnishguy @mondaybarschool learning about rum and cognac taking a virtual tour of the @tequilaochomexico distillery was so cool!! following along with @norbs414 and his A Cocktail a Day series watching @k8os do her thing on @likeablecocktails taking @jerry.global and @barsmarts beverage and hospitality courses for free! And last but certainly not least taking my @wsetglobal Level One Award in Spirits for free thanks to @corbysw and all the zoom classes that went along with it! Thank you to all of you who made quarantine so so much better than i ever could have imagined!!

Loving what you do is happiness.-Lana Del Rey I didn’t always love my job...i’ve always worked in the customer service industry and started at the bottom to be where i am today. I will never forget my days as a sandwich maker, donut dipper, barista, dishwasher, or cashier. Truth be told, my first job was at the petting zoo. That’s right folks...i would start my day by laying down sawdust & feeding animals, pass the hours by trying to k...eep the donkey and horse from humping each other & scooping poop and end my day by transferring the animals to their pens for the night and then hose down the zoo. Pretty glamorous, i know. I got my first serving job in 2005 at a Greek restaurant that didn’t have a bartender on most nights so we had to make our own drinks. It didn’t have a cocktail menu and was more of a beer/wine/hi ball place. That was my very first experience behind the bar. I didn’t really have a huge interest in bartending until 2013, when i worked at another restaurant that didn’t have a bartender where we also had to make our own drinks. This Italian inspired restaurant also didn’t have a cocktail list but had a full bar with tons of liquor. I remember seeing all this booze on the shelves and it would just sit there, untouched. I thought about all the money the owner must have spent on all this alcohol that wasn’t being used and how great it would be to start making some of that money back! We needed a cocktail menu. Sales would increase, tips would increase, guests would have more options...it was a win-win situation. So, i approached the owner and he said Go for it!. I had never created my own cocktail before! But i knew that i wanted to use our existing stock, it had to be relatively easy to execute and be relevant to the restaurant. The owner and i collaborated and came up with a great menu with cocktails, martinis, specialty coffees and the customers loved it. At that point i knew nothing about cocktails, had never been to a cocktail bar or even tasted a well made classic cocktail (or knew what that meant). Happy World Bartenders Day! Bartenders play such a vital role in the food & beverage industry and deserve to be appreciated every day. So, if you haven’t recently...thank your bartender today; for everything they do that you see and for all the things they do that you don’t ever see. All the research & development of recipes, the many hours of citrus juicing (with cuts on their hands usually), carrying heavy kegs, cleaning broken glass out of their ice wells in the middle of... a crazy night, running out of things at the worst possible moment, liquor suppliers going out of stock right after printing a new menu, customers not liking their creations, dealing with demanding servers & guests, being sticky and smelling like beer all. the. time.... You’re probably thinking why would anyone do that job? ...for me, it’s for those priceless special moments you get to be a part of...being a shoulder to cry on for your guest who is grieving the loss of a loved one, witnessing a couple break up at your bar, when you’re shaking a drink and a child smiles and stares at you with amazement from across the room, when you have those heart-to-hearts with strangers who become regulars & then friends, when you witness someone loving a drink you created, being a part of big & small celebrations-those moments are what keeps me doing what i’m doing. $291,330 was raised this year at Science of Cocktails! $1.2 million over 5 years! Science World was one of my favourite places to go as a kid so this cause is near & dear to my heart . Last night was crazy & amazing...i love seeing what cocktail experiments the crew comes up with every year. It’s so special that some of the world’s best bartenders live & work in Vancouver and are a part of this awesome event every year . Doing prep and having a pre-shift meeting & pizza ...with some of my idols is one of the highlights of the year for me! So happy to be a part of this great event. On February 6, 2020, over 1,500 guests circuited the dome, sampling one-of-a-kind science-focused fare from 37 bar sponsors and 14 food sponsors. Here’s my entry post I chose bartending, and hospitality, as my career because it’s in my blood and who I am. Growing up with both parents in the service industry, I spent many evenings doing my homework at the bar, sipping on a virgin cocktail. My family is a family of hosts. We love to cook, eat, and entertain our friends & family. Sharing good food & drinks with ea...ch other is how we show our love. So at a very young age, I experienced the immense joy of making someone happy by serving them food and drinks made with love. Bartending is my extremely fulfilling career of choice, because it allows me to make my guests happy in a very instantaneous, direct way. When someone sits at my bar, they are seen and appreciated. In a social media world, I want to be that person who brings you into the present. To awaken your senses with a delicious drink, and engage with the person across from you, even for just a moment. This weekend, while I was stirring a negroni, someone asked me Why are some drinks shaken and some drinks stirred?...great question. What I learned in bartending school was that all cocktails that have juice, dairy, or egg whites should be shaken. Shaking aerates and chills these cocktails in a pleasing way, creating a nice frothy effect. In contrast, cocktails that only use spiritssuch as martinis and Manhattansshould be stirred. Shaking these drinks would bruise the... spirits. It dilutes it and changes the taste, making it taste sharper. Whoever came up with the idea to combine eggs, milk, sugar and vanilla together is a genius. Custard, cake, french toast, crème brûlée, eggnog....the possibilities are vast and delicious. I made eggnog for the first time this week, but instead of milk and cream I used cashew milk. The results were creamy, nutty and lighter than regular eggnog. I used it for a cocktail I was serving at the Cocktails & Canapés event this past weekend at Plethora Fine Foods...and then after th...e event I made a special version for myself using the ingredients listed below... Line ‘em up! It’s Saturday, and I have the day off...life is good. I’ll be over here reminiscing about this cucumber mint vodka soda I made a few weeks ago for yoga bootcamp with @gmfitness.ca & @leahpainteryoga . . Next event: the soft opening of the Barefoot Gecko in September, where I have been contracted to create their cocktail list and also hired to be their Bar Manager! The magic of butterfly pea flowers....Just add citrus juice and watch the colour change from a deep blue to purple before your eyes. There are a couple of companies that have started infusing gin with butterfly pea flowers (@arbutusdistillery @empressgin1908 ) and it’s super fun to incorporate it into your cocktails. You could do it yourself or also make a simple syrup with the flowers. The flavour is very subtle which allows for great versatility. . The cocktail I made here... is a floral take on a French 75, with elderflower liqueur, blue gin, lemon juice, prosecco and elderflower cordial. I tried a French 75 for the first time at @thekeeferbar a few years ago...The Keefer 75. They infuse their gin with dragonfruit and it makes the drink this beautiful pale pink colour. So stunning. The Three Caballeros ...My current favourite combination of spirits: Spicy Poblano chili liqueur, smoky Mezcal and aged Tequila. All Mexican, all delicious on their own and absolutely perfect together. . Are you a fan of Mezcal? As a bartender, i’ve noticed over the years that it can be a tough sell to your customer. And, in my opinion, one of the most challenging spirits to make a delicious cocktail with that is approachable & appealing to your guests. I’ve seen many people cringe at just the idea of smokiness in a drink. . Rainy days call for Bourbon. That inner warmth on a chilly day is like you’re getting hugged from the inside out...or maybe that’s just me? My favourite way to drink Bourbon is in an Old Fashioned. My bartending teacher called it a gentleman’s drink...a Negroni or Boulevardier would also fall under that category. Very spirit-heavy. Basically just pure alcohol. But if you add the right amount of sweetness, bitters and dilute it properly the result should be a smooth, velvety... dream of a drink.
