The Only thing I #throwback on a Thursday is a bottle of Wine. However, when it comes to a new bottle of wine, there’s one important step between corkage and enjoying a glass: decanting. Decanting has three main benefits: 1. Decanting separates sediment from liquid. Decanting is first and foremost about separating wine from the sediments that settle at the bottom of the bottle. Red wines contain the most sediment, especially older wines, and vintage ports, while young white ...wines contain the least. Sediment is not harmful but tastes unpleasant. 2. Decanting enhances flavor through aeration. Aeration is the process of introducing oxygen to a liquid. This is also called allowing a wine to breathe. Aeration enhances a wine’s flavor by softening the tannins and releasing gases that have developed in the absence of oxygen. Decanting wine allows the flavors and aromas that were dormant while bottled to expand and breathe. 3. Decanting saves wine in the event of a broken cork. Occasionally, a cork may break, dispersing pieces of solid matter you don’t want in your wine glasses. While pouring, the cork will gather near the neck of the bottle as you decant into another vessel (sediment does the same). If the cork disintegrates, use a strainer while decanting to filter out the smaller bits. Decanting can be done up to four hours before you anticipate drinking the wine. There is little risk of over-decanting most wine; however, try to enjoy or recork the wine within 18 hours.

Eat more, drink more that’s the life, right? Red Wine controls blood cholesterol levels, protecting you from the effects of fried foods. Is there a better statement in this world? Why Degassing is Important It doesn’t seem like it should make a big difference, but leaving carbon dioxide in your wine can have three negative effects on your wine. 1. It leaves what should be a still wine carbonated.... While white wines often have a bit of fizz to them reds generally shouldn’t. Fizzy Zinfandel is not cool. 2. Suspended carbon dioxide prevents wine from properly clearing. White wines are especially sensitive to the amount of suspended carbon dioxide. An improperly degassed white wine can have a haze to it that won’t clear through fining. 3. Carbon dioxide increases the sensation of acidity in wine. While the acid isn’t really there it tastes like it is. Despite all these reasons to remove the carbon dioxide you don’t want to remove absolutely all of it. This can leave a wine tasting flabby and boring. For the amateur winemaker, however, this is rarely a problem. All of our wine is degassed for a set time each and every week and allows for the taste to stay true batch over batch that is put on. #themoreyouknow
