Almond-Vanilla Oatmeal Creamy almond-vanilla oats with a delicious hint of cinnamon. This was such a grape idea! Hope your weekend is grape, too! Almond-Vanilla Oatmeal (Makes 1 serving, about 1/2 cup)... 1/3 cup rolled oats 1 Tablespoon ground golden flaxseed 1 Tablespoon shredded coconut 1/2 chopped Medjool date 1/4 teaspoon ground cinnamon 1/2 cup unsweetened almond milk (choose vanilla flavour or add 1/4 teaspoon vanilla extract) plus extra as needed to obtain desired creaminess Top as desired. I chose green grapes, blueberries, sliced almonds and yogurt (flavour with almond and/or vanilla and sweeten with maple syrup if desired.) #oatmealbowl #oatmealrecipe #oatmeal

This was a perfect morning for baking! (See my stories for a view of today’s weather and spring forecast!) I don’t often make just one banana bread. I usually make four at a time! I use small loaf pans and make four variations. This loaf is one of my faves! Walnuts add such delicious flavour and a lovely crunch! Walnut Streusel (For 1 small loaf)... In a small bowl combine: 2 Tablespoons flour of choice 1 Tablespoon brown/coconut sugar 1/8 teaspoon cinnamon 1 Tablespoon rolled oats (optional) Add and mix until crumbly: 1 to 2 Tablespoons butter/vegan butter/coconut oil Add 1 to 2 Tablespoons chopped walnuts and stir or use your fingers to make a crumbly mixture. Sprinkle mixture on top of banana bread before baking. #streusel #bananabread #walnutbread

Brrr! It’s cold outside! I’m getting warmed up with a cup of hot chocolate! Happy #nationalhotchocolateday ! Hot Chocolate (Makes 1 cup)... In a cup or mug blend 1 tablespoon cocoa powder with 1-2 teaspoons organic cane sugar (or sweetener of choice). Mix in 1 tablespoon cold milk of choice (I used unsweetened almond milk). Stir until smooth. Stir in a melted block or two of your favourite chocolate bar (or chocolate chips). I used the microwave to melt the chocolate. Finally stir in 1 cup hot milk (I heated this in the microwave for 1 minute). Taste and adjust for sweetness. Top with marshmallows or whipped cream/coconut cream if desired. I took this quick shot in the middle of meal prepping. At that point the aroma in the kitchen was amazing! The cornmeal muffins were just out of the oven. I had already cooked brown rice, fresh corn and black bean chili with sweet potato. The spinach salad and dressing were next on my to-do list. Baked Pears with Crumble Topping So quick and easy to make! A pear-fect wintertime dessert that will quickly disappear! dEATS: Preheat oven to 350F. Grease one 8 (or two 6) baking dish. Cut 2 pears in half and scoop out the core. (Or use 4 canned pear halves.) Place 4 pear halves in the baking dish cut-side up. Spoon the crumble topping on top of the pears and and extra topping in the dish. For the crumble topping (enough for 4 pear halves) I combined 1/2 cup rolled o...ats, with 1 tablespoon flour, 1 tablespoon coconut (optional), 2 teaspoons ground flaxseed (optional), 1/8 teaspoon cinnamon, 1 tablespoon brown sugar or maple syrup. Add about 2 tablespoons softened butter and (or a runny nut/seed butter) and stir with a fork. Add chopped nuts if desired. Bake at 350F for 25-30 minutes or until the topping turns a golden brown and the pears are tender. Serve warm with yogurt or ice cream, if desired. #homemadedessert #lodgecastiron #pearcrumble #pears
