Using ingredients typically found in Iraqi Jewish households on Shabbat morning, this fast food-style sandwich hit the food scene in the early 1960s in Israel. Fried eggplant slices, hard-boiled eggs, tahini sauce (tahini, lemon juice, and garlic), Israeli Salad, pickles, chopped parsley, and pickled mango sauce (called amba) are packed into a pita, making a delectable (and messy!) sandwich. Definitely give it a try with plenty of napkins at the ready.
