What is a Poke? Poke (Hawaiian for "to slice" or "cut crosswise into pieces"; sometimes stylized Poké to aid pronunciation, also called Poké Bowl) is diced raw fish served either as an appetizer or as a main course and is one of the main dishes of Native Hawaiian cuisine. The start of the Poke is when the ancient Hawaiians enjoyed freshly caught fish with sea salt, seaweed, mashed Iamona and Kukui Nuts. How did Poke become such a typical food? The development of the Poke is quite simple. It changed to reflect the tastes of the new settlers. When a ship sailing from the western United States anchored in Hawaii harbor, the crew replaced salmon with salt. When immigrants came from China and Japan, soy sauce and sesame oil came in.
