Finding new and easy ways to eat more vegetables can be a challenge! It is so easy to get stuck in a rut each week- buying the same ones that we bought last week. If you want to find ways to put a fresh spin on your , our dietitian, Rachel, has some ideas for including more veggies in your weekly routine: TO EAT MORE VEGGIES TRY: 1. Puree them into your spaghetti sauce- broccoli, cauliflower, zucchini, carrots, onions, butternut squash will all puree well into sauce and bo...ost the nutrition! 2. Bake with them- zucchini bread, beet brownies, cauliflower rice pudding, butternut squash pudding, carrot cake, sweet potato pie the list is endless! 3. Keep ready-to-eat vegetables (baby carrots, celery, mini cucumbers or peppers, snow peas) on hand along with a tasty dip- this makes it much easier to snack on veggies through the day! NEW VEGGIES TO TRY: 1. Brussels Sprouts- these are a super easy one to prepare- simply wash and coat in olive oil, garlic and S&P and roast in the oven until tender. Taste GREAT with bacon and dried cranberries! 2. Spaghetti Squash: Cut in half, remove seeds and roast in the oven until tender. Use fork to separate squash from skin (in strands like spaghetti). Top with favourite pasta sauce and enjoy! 3. Rutabaga: Sweeter than turnip, and will become golden coloured when cooked! Peel it, cut it into chunks, boil in water until tender. Drain and mash with butter, salt and pepper! P.S Broccoli and cauliflower are still in season in Ontario, so including these veggies this week is a great way to shop local!
