Always start with a base of onions cooked slow in some oil. Once they start to caramelize, you know you’re going to have a tasty base. 2. Use up the wilted veggies in your fridge! You won’t notice the wilt once they’re cooked in. 3. Experiment with different broths for new flavours. Mushroom broth is one of my current favs for a rich taste. 4. Add some whole grains like barley or quinoa to make your soup more filling and energizing. Cool them right in the broth! 5. Adding a bit of acid can add an extra element of flavour to your soup- things like balsamic vinegar, rice wine vinegar, or lime juice all add an extra pop.
