Another quick balanced lunch! Dave ate Joey’s egg sandwich I made so I had to throw this together quick yesterday! We rarely eat cheese but when we do it’s goat cheese. Goat milk/cheese is easier to digest then cows milk/cheese. Joey loves cheese of coarse so it’s like a treat to her when we have it. I just added sea salt, pepper, garlic powder, oregano and a little olive oil. ... For snacks I added 4 different fruits and a oatmeal jar that I shared last week. I had made a couple with leftovers from my oatmeal the day before. Healthy fats, fibre & a little protein!

So today's idea came while we were having supper one night. We had salad and although Joey loves salad I never sent it to daycare because the lettuce would be all wilted by the time lunchtime came around. I also didn't want to have a mess to clean by putting a little dressing in a side dish so I just opted out of it all together. Not sure why I didn't think of this until now but I'm glad I did because Joey loved it! Her teacher said she opened it and said "I'm going to eat it... all!" LOL Yay! Main dish: cubed cooked turkey or chicken breast, bite size cucumber (if you can keep the peeling on for extra fibre and micronutrients), diced tomatoes, diced apple pieces and drizzled with poppyseed dressing. This dressing recipe is full of health fats but has a nice sweetness to it that most kids just love! Poppy Seed Dressing 1/2 cup Extra Virgin Olive Oil 4 Tbsp Raw Local Honey 2 Lemons, juiced 2 Tbsp Apple Cider Vinegar 2 Tbsp Poppy Seeds Sea Salt & Pepper to taste. Shake well before pouring over salads. This can be accompanied with different fruits or veggies and and a fat, fibre, protein snack (many ideas in the community and ill be sharing some here that are school safe in these next weeks). If I don't have any snacks available or prepared I add in a dish of pumpkin or sunflower seeds with a little raisins or a couple dates. Seed butters make great fruit dips too!

Veggie Filled Meatballs A couple weeks ago I shared my homemade ketchup recipe. For lunches you can pair it with these meat balls! 1 1/2 lbs organic ground beef... 1/2 cup shredded carrots 1/2 cup finely chopped mushrooms 1/2 cup chopped yellow peppers *you can switch out with veggies of your choice and cut it as small as needed to hide them* 1 cup organic gf oats 2 eggs beaten 2 tsp organic garlic powder 2 Tbsp Italian seasoning blend Bake in a greased glass dish at 350 for 20-25 minutes, turning halfway through. These can also be frozen so double the recipe to do some lunch prep!

Weight Management & The Amount Of Food We Consume I thought I covered everything I wanted to cover on this topic but a few other important points have been brought to my attention! Here’s one! When it comes to managing our weight we have been constantly told eat less and move more. It scares me when I see that advice given to someone. Even more so when the person giving the advice has no idea how much that person is eating. ... The reason for that is that we need nutrients for our body to function properly so there is such a thing as not eating enough. For most adults 1200 calories is just enough to produce the energy needed to perform basic bodily functions. And if our body is not getting enough nutrients to do what it needs to do imbalances will begin to occur. Limiting our intake can also put our body in protective mode causing our body to store fat and slow down our metabolism. This can lead to weight loss resistance and even weight gain. The best thing you can do is make nutrient dense balanced choices and LISTEN to your body. Eat when your TRULY hungry (I’m not talking about the stress or boredom hunger. ), take your time eating to not only chew it well and promote better digestion but to also be more aware of when your satisfied and should stop eating. Remember healthy fats, fibre and a little protein from REAL foods!

Yesterday was an emotional day with Grampa & Nana Trudy leaving in the early morning to go back home. The house sure is quiet today. I’m excited to get back to work but their visit was a huge reminder of how much we need to move closer. Joey has an amazing soul and will be loved wherever she goes but nobody will do that better then her family! ... Application for Dave’s green card will be going out by the end of this month! The next step in our plan to getting closer to home!
