A beer spotlight; @dageraadbeer Entropy No.13 - Apricot Sour. The Entropy Series from Dageraad and mix-culture barrel aged beers. Age and oak combine to give these beers extra complexity, funk and elegance. No. 13 spent 8 months with lactobacillus and brett, followed by a further 7 months on Naramata Apricots. Entropy refers to the beer lost, gods share as it it sometimes known, in the evaporative and time consuming oak aging process. This is not your common fruit smoothie sour but a effervescent, funky complex farmhousy ale.
