This is Bob. Bob is a healthy sourdough starter. Here is how to make your own Bob. He took 10 days to get from brand new to a healthy starter (I did forget to feed him 1 or 2 days but he rebounded and survived) Day 1: creating your own starter from scratch. What you'll need. 1 or 2 containers, plastic or glass (a mason jar will work), with a loose fitting lid. Start at a time where you'll be home to feed him/her around the same time every time. Give him/her a name so you reme...mber to feed him/her every day. In your container mix 2 tbsp cold water and 1/4 cup all purpose flour. Day 2: to your starter add 1/4 cup cold water and 1/2 cup all purpose flour and mix. Day 3-10: every day around the same time save 1/4 cup of your starter and throw away the rest. Add your saved starter back to the container or into a new container (I just reuse the same container multiple times. I only transfer or wash when my container gets too crusty or if I see a spot of mold trying to grow). Add 1/4 cup cold water and 1/2 cup all purpose flour and mix. *if you forget to feed your starter it's ok. Smell him/her and if they DONT smell like vinegar or ammonia feed them as soon as possible, and try to remember to feed the next day. If they get moldy, turn a bright colour, smell like vinegar/ammonia through it all away and start again. **if your going to be away for a day or 2 you can put your starter in the fridge after feeding until you can feed again. If you refrigerate your starter it still needs to be fed every 2-3 days. But it will take longer for a new starter to get to a healthy bread making stage. Your starter is ready to use for bread when it forms large fluffy bubbles and smells sweet and fermented. Kind of like a fruity wine or cider. Like the pictures posted, mine took 10 days to get to this stage. I will post a sourdough bread recipe tomorrow when I have pictures of the various stages of dough/baking.
