Using the whole animal gives us not only a challenge but great joy. Rabbits are a healthy lean meat chalk full of protein. They make complex pan gravies, stocks and sauces. Bratwurst with onion trio, cabbage, Nokomis Golden Ale & grainy mustard. . . I love food with a history. Oskar’s butcher in Regina was infamous for their brats. They say people would line up around the block to make certain they had their juicy, large sausages for most festive occasions. Everyone in Regina ate their brats a local sausage lover told me. Well, Oskar’s closed their doors and sold not only their smoker but the recipe that goes with it to the Ukrainian CO-OP. S...ome say they aren’t quite the same claiming they lack the juiciness, texture or girth. This leaves us to ponder whether in a last ditch effort to preserve their heritage Oskar’s left out key steps or is it that the CO-OP merely improved upon the recipe. Food is inherently nostalgic, so possibly only the doors of Oskar’s could serve them adequately.
