Red Clover and Saskatoon Berry Pops www.christinesheriff.ca//red-clover-and-saskatoon-berry-po What better way to cool down in the summer than with homemade popsicles, especially with freshly harvested fruits and herbs. ... I partnered with @forijthrills to explore and create a new wild popsicle recipe. Starting with what's in season we made a tea base-pairing Red Clovers with the lovely buds of wild chamomile. In order to have a nice consistency to our popsicles that isn't too icy hard we blended in Saskatoon Berries. It added a lot of sweetness and a nice shade of dark purple, making the popsicles equally beautiful as they are delicious. Ingredients: 1 cup red clover petals, rinsed 2 tbsp honey, or to taste 2 cups Saskatoon berries Juice of 1/2 lemon Water Instructions: 1. In a pot, bring 3 cups of water to a boil. 2. Remove the pot from heat and place the red clover petals in the water to steep. Set aside to cool. 3. Once the water is cool enough to handle, pour through a strainer to separate the clover petals. Add 2 cups of the clover water to a blender along with the saskatoon berries, lemon juice, and honey (you may have to do this in batches depending on the size of your blender) and blend until the berries are smooth. 4. Pour through a strainer to separate the berry seeds then pour into popsicle molds. Place in the freezer for several hours or overnight. Keep frozen. 5. To remove from the popsicle mold, simply run the outside of the mold under warm water for a few seconds and pull out the popsicle. Chocolate Chip Flax Muffins www.christinesheriff.ca/post/chocolate-chip-flax-muffins This chocolate muffin recipe is gluten-free, dairy-free, and vegan. They are also a good source of fiber with 2.5 grams of fiber per muffin.... Ingredients: 1 cup gluten-free oat flour 3/4 cup ground flax seed 1/2 cup tapioca flour 2 tsp baking soda 1 tsp cinnamon 1/8 tsp salt 1 cup water or unsweetened plant-based milk 1/4 cup coconut sugar 1/2 cup chocolate chips (make sure they are dairy-free if you want dairy-free or vegan muffins) Instructions: Preheat oven to 350 degrees. In a large bowl mix together the oat flour, flax, tapioca flour, baking soda, cinnamon, and salt. Add the water and sugar and stir to combine. Lastly, stir in the chocolate chips. Scoop the batter as evenly as possible into a silicone muffin tray or greased muffin tray to make 10 muffins. Place in the preheated oven for 20 minutes. Remove from the oven and let cool a few minutes before serving or transferring to a cooling rack. Stuffed Grape Leaves (Dolmades) www.christinesheriff.ca/post/stuffed-grape-leaves-dolmades Together in collaboration with Katelyn Landry @forijthrills we curated a fun grape leaf recipe you can try at home! It's destined to be a favourite new dish in your household. The lemony citrus flavour the grape leaves contribute is surprisingly fresh when eaten raw! Although due to the tough texture of the leaf, with a simple 4 minute blanche they're ready to fold, roll and stuff with ...this amazing mixture of rice, herbs and ground beef! Ingredients: 12 grape leaves 1/2 lb ground beef 1/2 cup cooked rice 1/2 cup cheese, crumbled (I use vegan cheese) 1 tbsp each of chopped fresh basil, rosemary, thyme and parsley 1 tsp of salt or to taste 1/4 tsp of dried peppercress seeds or pepper olive oil for cooking Instructions: Bring a pot of water to a boil and prepare an ice bath. Once the water has boiled, remove the pot from heat and blanch the grape leaves by submerging them in the boiling water for 3-5 minutes. Remove from boiling water and place in the ice bath for a few seconds to quickly cool. Remove from the ice bath and set aside. Heat a skillet over medium high heat. Place a drizzle of olive oil, the ground beef, salt, and pepper into the skillet and sautee until the beef is browned. Add all the fresh herbs, cheese, and cooked rice, and stir to combine. Remove from heat. Lay a grape leaf on a flat surface. Add 1-2 tbsp of the beef mixture onto the center of the leaf. Start rolling the leaf by lifting the bottom edge up and then folding in the bottom left and right side of the leaf and roll froward into a little wrap. Repeat with each leaf. Heat a grill to approximately 400 degrees. Lightly coat the outside of the rolls with olive oil. Cook the rolls for about 6-8 minutes turning once halfway through. Serves 2
