INGREDIENTS... 2 tbsp olive oil 3/4 cup onion 1 tbsp minced garlic 1/2 tbsp minced ginger 1 cup green lentils 12 oz broccoli florets 3 handfuls kale 12 oz frozen butternut squash cubes 1 tsp onion powder 1 tsp garlic powder 1 tsp herbs de Provence 1/2 tsp chili powder 1/4 tsp cumin 1/2 tsp sea salt 7 cups vegetable broth 1 tsp liquid aminos 1 cup pumpkin purée 1/4 cup creamy peanut butter 1 tsp maple syrup DIRECTIONS sauté the onions, garlic and ginger in olive oil on medium heat for 2 minutes. then, add the lentils, veggies, kale, spices, vegetable broth, liquid aminos, pumpkin puree, peanut butter and maple syrup in that order cook on medium-low heat for about an hour after the stew comes to a boil and stir periodically (... I just threw it all in the instapot and cooked for 30 min. )
