Take a look at this Kimchi Kale Superfood Salad created by One Green Planet! -onegreenplanet.org We have most of the ingredients you'll need! Here's what you'll need:... 5 cups curly kale, chopped avocado 2 tbsp freshly squeezed lemon juice tsp sea salt cup vegan kimchi 1 cup chickpeas 1 roasted sweet potato (I used a Japanese yam) 3 tbsp toasted pumpkin seeds dash of fennel seeds and black sesame seeds Instructions: 1. Place the chopped kale into a large mixing bowl. 2. Add the avocado, lemon juice, and sea salt. 3. Using your hands, massage the avocado into the kale until the greens are tender (about 2 minutes). 4. Add the kimchi, chickpeas, sweet potato, and seeds. 5. Season to taste with more sea salt, and enjoy! See more

Shoutout to @veggie.society for creating this beautiful Pitaya Mango Banana Nice Cream. Bananas are known to be one of the best superfood fruits and what better way to enjoy them than in this icy treat. Be sure to check out veggiesociety.com for more great vegan recipes like this. Here's what you'll need:... 3.5 cups frozen banana (3-4 large bananas) 1/2 lb mango (cut into chunks) 3.5 oz frozen dragonfruit purée 1 tbsp coconut milk or lime juice (optional) 1 tsp vanilla extract (optional) 1 tbsp basil leaves -for garnish Instructions: 1. Add the frozen mango, bananas and dragon fruit to a powerful blender (I used my Vitamin) or food processor together with 1 tbsp of coconut milk (or lime juice) and vanilla. 2. Process on the frozen dessert setting in the Vitamix and use the temper to help push the frozen fruit into the blades. You might need to process 1.5 times to get the creamy smooth texture you love. If using a food processor make sure to pause and scrape down the sides of the bowl as needed. 3. At this point you’ll have a soft-serve ready to enjoy sprinkled with some fresh basil or your favourite toppings. To harden it up to a thicker texture you can just pop your ice cream in the freezer for 30 minutes or so. See more
