What is TEMPEH? Well, aside from being a delicious meat alternative, tempeh is fermented soybeans! It is nutrient-dense and has a high amount of protein- 15g per 3 oz serving! It may decrease cholesterol levels, oxidative stress and appetite while improving bone health. Tempeh also contains prebiotics, which may improve digestive health and reduce inflammation.* This is such an easy protein to add to any meal and it takes on the flavour of your favourite marinade in under 30... minutes! This week we've made a vermicelli noodle salad with soy + sriracha @henrys_tempeh ! It is SO light and fresh and can be done from start to finish within 30 minutes. YES please! To make your marinade: -Whisk together 1/4 cup of soy sauce, 1 tbsp sriracha (more or less depending on your spice level) and 1 tbsp sesame oil -Toss your tempeh in the mix until it's fully coated and let it sit while you get everything else ready To make the salad: -Shave cucumber and carrot -Finely chop up 2 inches of fresh ginger (This adds a nice bright flavour) -pull as much cilantro off it's stalks as you want -Blanch edamame (about 3 to 4 mins) -Cook noodles according to package directions and run both of these under cold water to stop the cooking process -Mix 1/4 cup of rice wine vinegar, 1 tbsp brown sugar, a splash of fish sauce and some chili flakes (again, spice is up to you!) and toss the above ingredients in there! Fry your tempeh until it's got some crispy edges on it Top your noodz with your tempeh and a bit more fresh cilantro and VOILA! We know this SOUNDS like a lot, but it is honestly so quick, you'll be sitting down with this bowl of freshness in no time!
