Day dreaming of these #loadedsweetpotatofries I devoured yesterday evening This is definitely a game changer for me - it’s like eating a poutine and nachos at the same time! I pre cooked my sweet potato fries, added one serving of ground beef, red onion, bell peppers and cheese! Topped with some guacamole, and drizzled some Franks buffalo sauce; amazing! When it’s peak peach season and it’s Sunday morning OMG, this was amazing! I made a little granola by mixing oatmeal(about 2-3 tablespoons), a teaspoon of brown sugar, a teaspoon of maple syrup, and cinnamon. Broiled for 5-10 minutes until golden. I sliced a peach and added to a pan with a little butter, cinnamon and a sprinkle of sugar. Cook for a couple of minutes until caramelized, then I layered the granola and peaches and topped with vanilla Greek yogurt and a little peach juice left from the pan! I don’t know about you, but when I have my morning coffee or need an ‘afternoon pick me up’ - my sweet tooth always act up and I find myself reaching for something sweet and satisfying - Pinterest showed me these mini sweet potato brownies with only four ingredients and they taste amazing They’ll pair perfect with my coffee without the guilt of feeling I fell off track, and still able to crush my goals Preheat oven to 350, lightly grease a mini muffin pan and set ...aside. Next, mash one cooked sweet potato(about 1 cup), 1/4 cup peanut butter, 1/4 cup honey or maple syrup, and 1/4 cup cocoa powder. Melt PB and sweetener in a sauce pan. Once melted, add to bowl of mashed sweet potato, add in cocoa powder, and stir until well combined. Measure 1 tbsp of batter and fill pan. Bake for 20 minutes. Let cool before removing from pan. Mixed veggie hash prepped for a of couple meals this week. This is basically everything that was starting to go bad in my fridge - mushrooms, yellow and purple onions, green peppers, kale, spinach, half can of petite stewing tomatoes, grated cauliflower, butternut squash, half a medium size sweet potato and a few simple seasonings (salt, pepper, garlic powder, paprika, basil).
