If you're a chocolate lover be sure to save this one! These decadent avocado truffles are packed with antioxidants, fibre, and unsaturated fats for a delicious and satisfying snack for that sweet tooth. They are also great to freeze and have for the whole week! Ingredients:... 1 avocado, mashed 6 oz semi-sweet chocolate chips 2 tbsp brown sugar tsp vanilla extract tsp lemon zest 1/8 tsp kosher salt 2 tbsp unsweetened cocoa powder, separated Assorted toppings (coconut, sprinkles, etc.) Instructions: Melt the chocolate in the microwave in 30-second increments, taking care not to burn it. Once melted, stir in the mashed avocado, brown sugar, vanilla extract, lemon zest, salt and 1 tbsp. of the cocoa powder until thoroughly combined. Place the truffle mixture into the fridge for 30-40 minutes and let cool until partially set. Use a small ice cream scooper or tablespoon to dollop out the truffles and form balls with your hands. If you're looking for a new delicious snack, I have the perfect one for you: grilled edamame! Edamame is packed with protein and fibre, making it a great snack! Start by preheating the oven to 400F.... In a bowl, add 2 cups (500ml) of frozen edamame, 2 tbsp (30ml) of fresh parmesan (grated), 1/2 tsp (2.5ml) of chili powder, 1/2 tsp (2.5ml) of paprika, some salt and pepper to taste, and 1 tbsp (15ml) of olive oil. Mix all together. Place the edamame on a baking sheet covered with parchment paper. Bake in the center of the oven for about 20 minutes. For a crunchier result, turn off the oven and let them sit for another 30 minutes. This is a great snack that you can prep for the whole week! Interested in more healthy snacks you can prep ahead? Happy Easter to all my followers! This is a friendly reminder from your Dietitian that it is completely normal to enjoy some extra treats right now. Enjoy your holiday! If you need a fun idea for leftover mini eggs, try making these marshmallow cereal bars. Use your favourite Rice Krispies squares recipe but switch up your cereal and add chopped chocolate eggs.
