Loaf and Honey 09.05.2021

Our first row running 4 deep. We now have 192 wheels aging. New wheels will be coming out of the aging room at the end of next week and heading out to some of your favorite stores. Stay tuned as we restock locations. Thanks for following along!

After the cheese has been removed from the mold after sitting overnight we give each wheel a salt rub. Or known as dry salting. Saltis an essential ingredient in cheese making. Not only does it add flavour to thecheese, it helps to pull out more moisture as it ages.The first 24 hours the cheese are left with the dry salt and you can see how much liquid is expelled during this time. Our washing solution also has salt in it to help along they whey (couldn't resist ) Most ...importantly the primary reason for saltingcheeseis to retard or halt the bacteria cultures continuing to convert lactose (milk sugar) into lactic acid. It will help to kill harmful bacteria and other fungi growth when used as a brine for salting after pressing or as a simple wash during maturation (this is our method) Salting is also essential in the development of a natural rind cheese. We would like to take a minute to share some exciting news. This powerhouse of a lady has taken the head chef position @pineridgehollow and will be starting this week. Rachel is very excited for this new opportunity and has already drafted up a few new menu ideas. (Stay tuned for all the garnishes to come ) She is greatly looking forward to being a part of a space that shares our values of supporting local producers and businesses. As well as becoming a part of a strong tea...m in a beautiful environment. Please wish Rachel a big woot woot for this new adventure. What does this mean for Loaf and Honey you may ask? As you can tell we have been focusing more on the cheese as of late and will be continuing to focus on the growth of the creamery side. Will still be doing some catering and pop-up events so stay tuned for more information. But for let's be excited for Rachel!

We have added all 4 of our fresh ricottas to the @stnorbertmarket online ordering. So now you can get some of Momma's mustard our Golden Prairie cheese as well as the soups and hand pies all together. We only put limited numbers of ricotta this week to see how it goes so order while you can. Thank you for your continued support.

Oh do we wish we would have made more of these gems! We only made a few as a fun little test with some extra curds while we were using jersey milk last year from @realfarmmilk. These little wheels are about 3 inchs wide and 2 inches tall but OH do they pack a punch of flavor. We have tasted them every few months along the way and they only keep getting more amazing each time. They have developed these beautiful crystals on the outside rind and the firm inside texture just explodes with nutty buttery goodness. Sorry we didn't make more so we could share. But will be looking to recreate these again once the expansion is done and we can more space for aging.
