The term "Mandi" means dew in our Yemenise Culture. The reason it is named after dew is the way we slow cook our meat and rice in steam. We use a special blend of seasoning and allow for the drippings from the meat cook into the rice. This process marinates the spices into the meat, and makes it so very tender.
