How easy is it to incorporate beans into your diet? This easy! An hour ago, I didn’t know what I was going to make for supper. I had a pepper and spinach that needed to be used up so a stir fry seemed like a good option. No meat thawed? No problem! Open up a can of your favourite beans, drain rinse and voila - there’s your protein. Season the veg and beans with your favourite Asian stir fry seasoning/top with your favourite sauce and serve over rice.... I used Romano beans for this particular creation.

We're celebrating #InternationalHummusDay with our White Bean & Chickpea Hummus with Roasted Red Pepper Pesto. A flavourful hummus with an extra boost of protein. White pea beans (navy beans) and chickpeas are blended together and topped with a roasted red pepper pesto. Serve with whole wheat pita crisps, crackers or your favourite veggies. Thank you to The Yum Yum Factor for this great new recipe - White Bean Bomba Crostini. "If you have a can of white cannellini beans and a jar of the spicy, Italian condiment Bomba, you have found a match made in heaven. The creamy sweetness of the beans is balanced by the bite of chilis and the mint adds a hit of freshness. Perfection in under 20 minutes. You can make the bean mixture ahead of time, as it keeps well in the fridge for a few days, and then just slice up as many... baguette slices as you need for the serving. You can also mix it with cold pasta or serve it on polenta or, do what I do, and just eat it straight out of the bowl!" And here is the finished product, and the much coveted thumbs up. Bean Mac & Cheese - bit.ly/beanmacandcheese I mostly followed the recipe, with a few (ok lots of) substitutions. I had no nutmeg (that I could find), cayenne pepper, or Dijon mustard so I used, instead, pumpkin pie spice, Chili powder, and regular mustard. And I just used marble cheese because that’s all I had. Finally, I had no navy beans so I used white kidney beans instead. Keep in mind, I decided very l...ast minute to make this. Violet wanted Mac & Cheese for supper (you know the kind I mean)...but I didn’t have any. This meal came together in about 40 minutes (it would have been faster if I had actually been prepared and had been able to go about things in an organized fashion. Re: the thumbs up. This was achieved until she found out about the beans. Then she changed her mind and said it was just ok. She’d already eaten about half her bowl at that point. Then she realized she had not put ketchup on it (as she usually does with Mac & Cheese). We returned to the thumbs up position with the addition of ketchup. #betterwithbeans
