An interesting topic was raised regarding beef orders and pricing. Great opportunity to explain to our valued customers. When you buy by a side or quarter, you are paying for hanging weight before cut. This would include deboning, trimming etc. Flat rate prices allow for you to receive premium cuts like T-Bones for the same low price as ground beef for example. The weights used are the hanging weights given to us by the Butcher. I have attached a one-pager that simplifies the process. It is a great tool for Farmers and end product consumers to understand where the numbers come from.
