Another experiment with Gluten-free, Lactose-Free, and this time Sugar-free as well. Light and fluffy lemon bars. All they need now is to cool down and get their strawberry on top, then they are done.

I was asked to make a gluten free lactose free cake for my husbands Co-worker that is coming back to work. It may not look super pretty but it is gosh darn tasty. Made with almond milk and lactose free margarine the icing tastes like it's made with butter and milk! Hope she likes it!
