Happy Whisky Wednesday! If you’ve every visited a distillery, you know that a great deal of time is spent talking about barrels. The barrels play a critical role in creating the taste of the whisky, which is why distillers import aged barrels from all over the world to get a particular flavour.... Scotch whisky is typically aged in barrels that have previously held bourbon or sherry. The inside of the barrel is toasted (in Europe) or charred (in the U.S.) to create charcoal that filters the whisky to remove undesirable flavours over the aging process. All whisky barrels are made of oak, but the type of oak (American or European) will affect the spirit’s final flavour, since each wood has a different level of tannins, lactones and lignins that are absorbed into the whisky. Even the size of the barrel will have an effect. All this goes a long way to explaining why choosing a barrel is so important and why it was such a big day when our barrels arrived. Our distiller, James Marinus, took lead on a project, with an air gun in one hand and a crow bar in the other. Some descriptive words were required to help persuade bolts and holes to come together. We’re happy to report that no barley was harmed during this ordeal! James assembled the shiny galvanised beast that towers over 35 feet high, has a capacity of 100 metric tonnes of barley with air-drying capacities. Back in the day James’ nickname was Tex. The name itself is the very lot in which the barley was grown, as well the coordinates to the exact field are included on every bottle. These collective characteristics grow barley in distinctive and unique ways resulting in unique flavor profiles from these micro regions on our farm. This week we are thrilled to bring you the Holy Trinity of festive features. You will be thankful for our delicious Turkey Pot Pie loaded with chunks of turk...ey breast from Rossdown Farms & Natural Foods, carrots, peas and rutabaga, topped with a flakey rosemary puff pastry, side of cranberry sauce and paired a roasted golden beet and pear salad.
