The winemakers grape and the heartbreak grape . Chardonnay and Pinot Noir, the siblings of Burgundy represent two different perspectives in the vineyard. Where Pinot Noir can be a heart breaker it is phenomenal at showing the terroir of every vineyard it is grown in differently. Chardonnay on the other hand is the winemakers grape, it is amazing at showing the personal touches in the winery . One of the top vineyards in Ontario is Le Clos Jordanne and from the beginning, ...they have been focused on showing what these two grapes can do in their home and hands . Their Le Grand Clos vineyards take a note from Burgundy, using a single-vineyard approach. These vineyards sit on the western side of the full vineyard and have shown great potential year after year! . Currently, the 2017 vintage has been released from both the Le Grand Clos Chardonnay and Pinot Noir. 2017 was a record-breaking year in many ways and these wines show it off in the bottle . This Sunday I will be diving into the 2017 Chardonnay and Pinot Noir with winemaker Thomas Bachelder. Thomas has been at Le Clos Jordanne from the start so I am excited to hear these memories on how this vintage stacks up to all the rest . What goes into a vintage - Only the winemaker knows @thomasbachelder . Harvest time is here which means that the new vintage is upon us! Winemakers spend all year preparing their vineyards for this moment because as the saying goes great wine is made in the vineyard .... What the next year has in store in the bottle is one of my favourite topics to discuss with winemakers. Vineyards, winemaker, time, and grapes - The blend of wine! . . Every wine is a blend of these factors but blended wines take this to the extreme. Where single varietal based wines showcase one grape, blends have many adding their own influence to the final wine .... The most intriguing thing to be about blends is that you can taste every single grape used in the glass! . Steve is a king of blending! His newest @nyaraicelarswine sparkling, Folklore is a blend of 5 grapes - LAcadie Blanc, Chardonnay, Muscat Ottonel, Sauvignon Blanc and Gewurztraminer . How do they play a role in the final wine? . LAcadie Blanc brings its round texture and bright minerality with notes of citrus, apple and white flowers Chardonnay brings to the blend its white flower notes as well as crisp cool-climate acidity and fruit notes of lemon and orchard fruits Muscat Ottonel and Gewurztraminer are the aromatic leaders in this blend, they are both heady and high floral with tropical fruit notes and less acidity Sauvignon Blanc is last but not least, this grape brings structure to the blend, with its green herbal notes, bright acidity and minerality . Like the story behind the wine itself, each grape brings something to the final blend, and the wine would be the expression it is without them all working in harmony . . Get Up Yall! Nyarai Cellars has a Sparkling! . You heard me right. Nyarai Cellar has made a new wine and it is sparkling! . Steve Byfield is one of my favourite winemakers in Niagara and this is a new venture for him and his business partner Sharon Little. Diving headfirst into the world of sparkling with this new production. Folklore is a blend of LAcadie Blanc, Chardonnay, Muscat Ottonel, Sauvignon Blanc and Gewurztraminer. It is far too drinkable in the best way poss...ible! . Filled with aromatics of white rose, white flowers, yellow apple, white peach, and a meadow-like herbaceous feel On the palate, the wine is bright with a round texture and an inviting level of bubbles. It has soft fruit notes of tart apricot, orchard and stone fruits with a soft line of minerality throughout . The wine was crafted as a thank you for the struggles, sacrifices and hardships endured by the Nyarai team and their ancestors . Why a sparkling wine to celebrate all of this? Because that is what the generations before us would have wanted. To see us do better, be better, and go farther than they ever thought possible. Rack it! Stack it! Barrel up! . With harvest going on as we speak I thought it would be fun to dive into the conversation of barrels. Barrels add texture and transforms or enhances flavours, either by bringing out wine flavours or by adding those smokey toasty notes barrels are known to for .... There are a couple of different things that affect what impression barrels will leave on a wine, those are barrel age, size and stave thickness . Lets dive in! . Barrel Age Barrels let oxygen interact with wine, impart tannins and the newer they are they can also add toasty flavours to the wine inside. The younger a barrel is or if it has been retoasted the more flavour will be added. Older or neutral barrels will soften wine without adding flavours . Barrel Size Barrels can range in size from the standard barriques that are 225L to large Botti barrels that can be up to 20,000L. The large the barrel the less the wine will interact with the wood providing a different palate to the wine overall . Stave Thickness This is where everything gets complicated. The thickness of the barrels staves, the pieces of wood that actually make the barrels themselves can pay a large role. Thinker staves increase the amount of oxygen the wine is exposed to and thinker ones do the opposite, so this is a major decision . Anyway to slice it barrels play an important roll in winemaking all the way from fermentation to ageing! . Harvest is here! Bring in the grapes! . . Harvest is upon us in Ontario during the month of September and 2020 is looking like it might be an exciting vintage! .... 2020 was not without its challenges but what makes this vintage look promising is the amount of heat and dry weather Ontario experience this summer . Grapes hate to get heir feet wet but they love to be warm. Essentially they are the poolside drinker at every resort you have ever been to, they will wear a bathing suit but they will not be going swimming any time soon . With all that has happened this year, I am excited to see what the 2020 vintage has instore. My prediction is that this vintage might be a collector but we will have to wait and see! . Going full Somm and Geeking out hard today! . Lets talk about The Geek Riesling from @leaningpostwine Honestly, this is a wine that fully pulls me into the Sommelier world. Not only is it balanced and complex but the method of winemaking brings out my inner, constantly present, wine geek! .... Here are the facts The Geek Riesling is made from the Wismer-Foxcroft Vineyard in Niagara, one of the crus in the region Ilya, the winemaker, makes a full Wismer Riesling but pulls some aside for The Geek that is fermented to dryness Then the winemaking goes full throttle! . Ilya adds in the lees from other white wine fermentations. Including Riesling, Chardonnay and Sauvignon blanc from 2014, 2015 and 2016 vintages are added to this 2017 creation . Done in a Solera like system the wines then aged for 22 months on the lees and the result is spectacular! . This wine is a bold golden colour With aromas of cheese toasted bread, bruised apple, honeydew melon rind, untoasted nuts, lime skin and tarragon On the palate, the wine has immensely bright acidity, there is a pithiness in the structure and it gives flavours of line and lemon zest with tart apple, and tart mango skin . Heaven is a vineyard! At least for me, it is! . . This Sunday I decided to take some much needed time away from the city. So my sister, my partner in winery visiting, packed up the car and headed out to Ontario wine country! .... From Pinot Noir to Cab Sauv, exploring red wine! . Yesterday was #nationalcabernetday and it dawned on me that I dont have a single bottle of Cabernet Sauvignon in my cellar! My lack of Cab made me think of red wine as a whole, so lets dive into some key points about red wine! .... Red wine is set apart from white wines because of grape skins Grape skins are what give red wine their colouring, tannins, structure, age-worthiness, and level of colouring. Think skins can deliver more colour into the final wine and more tannin to boot! . Red wine grape are thought to be older than white wine grapes The eldest in the family tree, white wine grape have be hypothesised to be a mutation of red wine grapes and arrived later into vineyards, case and point Pinot Noir and all it mutations . Red wines contain less Sulfites than white wines Due to their acids and tannins red wines are more stable and dont require as much sulfites. Sulfites have been used in winemaking dating back to the Romans and contain less than whats is found in soda pop and pre-packaged meals. In short they provide stablity and red wine have got that covered . Red wine are most commonly made from grapes with clear not dark flesh Inside of nearlly all the red wine grapes in the world they look the same as white wine grapes, which is why red grapes can be used in making white wines. Teinturier grapes are the expection, they are grapes with dark flesh and they are far less common . . What a week! And soooo many glasses to wash! . . This has been such a fun week fully exploring @dorueda .... When I got into wine Spain was one of the last regions I attempted to conquer and I have to say I am always learning. I love how the country is filled with so many indigenous grapes and the myriad styles of wine made! . Thank you to everyone that has been enjoying taking this journey with me! Nothing but vineyards for as far as the eye can see! Clearly I cant get over @dorueda . North of the de Gredos Mountains, to the west of Ribera del Duero and bordering the wine region of Toro sits Rueda. I have been talking a lot about this region in the last couple of days but it is a place that has really captured me and my glass! . The thing that always grabs me about Rueda is its come to Jesus moment over Verdejo. I say this because Verdejo is the native grape of t...his region however after Rueda was devasted by the wine industrys biggest villain, phylloxera, the region was replanted with mainly Palomin Fino - the Sherry grape. Verdejo was revived decades later back to its rightful place . Once you dig a little deeper it is clear to see that in the time apart both clearly missed their other half . Rueda is a region that has soils made of sandy clay and topped with a loose layer of stones that developed in the Duero river basin in the Cenozoic era, a looooooong time ago. The region is hot and dry as well, making it hard for sentimental grapes to grow. Verdejo is not sentimental, it has a think skin and thrives in this difficult environment . This winning combination has set up Verdejo to be the kingpin of the Rueda! . From the Duero River to the Glass with @bodegasverdeal . As a Sommelier, it is too interesting for me to explore a region fully with only one or two grapes. Actually, when you think about it all the great winemaking regions around the world have done the same - take a look at Burgundy, Montalcino and Barolo! . @dorueda has a winemaking culture like these great regions, mainly based on wines made from Verdejo. It has been fun to explore this region but I an thirsty for mor...e! . No Prez from Bodgas Verdeal will be joining me this week on the next episode of Bottled Up Live! Vinos Sanz is located in the village of La Seca, right in the heart of D.O Rueda and posting some of the oldest vines in the regions farmed by six generations of family winemakers... . They make many wines under the label but I have been really enjoying their MonteSol production this week.MonteSol was created with the idea of renewing tradition, making traditional wines in a modern way that are very expressive of the region - and boy is that ever true! . Made from 100% Verdejo the wine is a beautiful straw yellow colour Filled with aromas of delicate white flowers, green herbs, and soft spices of anise complemented by fresh fruit notes of green apple, lime zest and lemon juice On the palate, the wine bright, lifted and balanced with high acidity but a soft texture that shows how older vine play ball . Tapas and Verdejo? this is my kind of day! Cheers @dorueda . . Diving into the region of Rueda more today with some gastronomic delights!... . Northern Spain is known for its fresh and local food so since I cant travel there myself the @eatertainment D.O Rueda Northern Spanish Meal and a bottle of @bodegadiezsiglos Nekora Verdejo will transport me there without leaving my kitchen! . All of my go-to favourites are included, its almost like they knew exactly what I wanted plus to do minimal cooking for a Friday! Today is serving up: Marinated olives, artichokes & onion Paprika spiced crostini Smoky sea salt fried potatoes with blistered tomatoes, parsley, olive oil Suckling pig with apples in natural jus Gazpacho Grilled octopus with white beans and piquillo peppers Mushroom & Manchego croquettes Roasted garlic aioli . As for the wine pairing the Mekora Verdejo is perfectly matched to the cuisine! . This wine brings aromas of tarragon, sage, green apple, fresh hay, lime and lemon citrus notes On the palate, the wine is classically displaying the region with tart citrus notes, bright, refreshing acidity and high levels of minerality . Cheers to @dorueda Celebrating 40 Years of Epic wine! . . On your next trip to Spain visit Rueda! .... This region has been making amazing wine well before it was granted its DO status is the 1980s - becoming the 1st official wine appellation in Castilla y Leon! . The region is made up of vineyards that sit on the high plains south of Valladolid, about 700-800 meters above sea level. Its higher elevation and unique pebbly soils make wines that showcase minerality and bright acidity . Mail Call! New Wine from @eightkilos . . There is a new wine club in the city, eight kilos! And this month thy are serving up some classic wines all boxed up!... . I am super excited, this case includes wine from classic regions across France and Italy with 3 wines inside . First up is the Bret Brothers Macon-Village Chardonnay. A classic region in the Burgundy AOC. The two brothers Jean-Phillippe and Jean-Guillaume make wines in a biodynamic and organic style with a nod to tradition in this classic regions . Ros is next with Domaine de Beaurenard and Famille Coulon. This ros is a blend of Grenache and Syrah made in the Chateauneuf-di-Pape regions. I have yet to try this wine but to me, it looks like a new take in a classic place and I cant wait until it is cold enough to drink! . Last but not least is Azelia Langhe Nebbiolo. Made by the Scavino family they have been making wine for 100 years so you know they got this down packed. This expression of the Nebbiolo grape comes from the Barolo region, the major difference is that it is fermented in stainless steel making for more freshness in the wine . The protagonist, the plot, and the driver in the story . . Wine! Wine is the story .... Once I found out that I could have a career in this amazing world there was no way I was going to let it go. Just like many in this world of wine the decision do so so what lifeblood for me and I love reading the story of those that have done the same, real and fictional . I have been reading Trillium by Margaret Lindsay Holton, MLHolton, a completing story that brings to life three fictional characters living in the Niagara wine region . Each character enters the story at a different time in their life. Starting with Tom Hartford, who enters the region by foot in the 1750s. Franco Di Angelo, who arrives by ship Sicily to Hamiltons port in the mid-1850s. Finally, Paddy OSullivan, coming to the region just before the outbreak of World War 1 . The frontier man, labourer and con -artist have stories all rooted in the region and their stories cover around 250 years with Canadian history sewen in . The book is a great weekend read, but be sure to keep track of all the storylines as each character and their viewpoints are conveyed. They do cross paths is the trials and tribulation of the agriculture with the story ending in 2001 . Give Trillium a read for yourself! . Thank you MLHolton for putting this story to paper! It is a delightful and light red that I like all by itself . @benazzoliwinery makes a great rendition of this DOC classic. The zone where Bardolino is made can be found right next to Lake Garda, sandwiched in between the Aramone DOCG and the lake. The sisters of Bennazoli make their out of a blend of Corvina and Rondinella . Showing a bouquet of aromas in the glass that is dominated by floral notes of rose, germanium and red flowers. Vermentino has always been a favourite grape of mine, with its bright citrus notes and earthy mineral undertones it has always captured me!... . Valdonica makes their Vermentino in the Maremma Toscana DOC, a large DOC in southern Toscany that encompasses two other well know DOCGs. Not far from the coastline and sitting on volcanic soils made by the Sassoforte inactive volcano Valadonica makes wines that are organic and true to the terroir of the region . Cold-pressed and fermented with wild yeast the Mersino Vermentino is aged on lees for 5 months, making a wine makes me want to finish the bottle instantly! . Today I am not bringing a bottle with me be but canned wine by STEL and MAR instead. I have to admit I was skeptical of wine in can when it first came not the market, being my Sommelier self. BUT I have been proven wrong! . The wines are great and make for easy recycling and day drinking, just what my Saturday needs . California wine made from Chardonnay, Zinfandel, Syrah and Grenache, STEL and MAR source their grapes from Mendocino and Lodi . The full line up includes Chardonnay from Mendocino Zinfandel from Lodi Ros of Syrah and Grenach from Lodi . I am feeling inspired and headed to the park for a day of recouping.
